Let’s try more whisky from Denmark, specifically from Thy Whisky - the barley nerds! They bottle several series of small batch (or single cask) single malt whisky. The Kornmod series is described as follows:
“Made from heritage grains, revived after more than a century in the Nordic Gene Bank. Bringing us a glimpse from the past. Like ‘Kornmod’, the distant lightning on the Danish summer horizon.”

Barley: Imperial
Malt: Pale Imperial Malt
Casks: ex-rye and ex-bourbon barrels
Distilled: February 2019
Bottled: May 2022
Bottles: 929 (50 cl)
This whisky is more or less sold out, but you can find at around DKK 1000 online a few places still.
Nose: Shy at first. Then rich barley notes with a citrus edge to it. With time also hints of detergent (in a good way, believe me!) Mild pepper and aniseed with time.
Taste: Full bodied. Rather spicy - pepper, aniseed and cinnamon. Rich barley notes.
Finish: Medium long. Sweet, fruity and malty. Mild spiciness all the way - aniseed, pepper and chipotle chili. White sugar in the end.
Comment: Sweet and charming.
