The Staining Bastard is the second release in their Research Series. Made from locally produced rye and barley, this is what they write on the official product page:
“Stauning Bastard a rye whisky made purely of local ingredients, malted on the floor at our distillery and double-distilled in flame-heated pot stills. After at least three years in new, toasted virgin American oak casks, it has been rounded off with at least 6-months ageing in old mezcal casks from Mexican Oro de Oaxaca.”
Nose: Rye is unmistakable, paving the way for a gentle creamy fruitiness. As it settles, a hint of citrus emerges, adding a zestful layer.
Palate: With a medium body, the taste leans a bit rustic. The trademark peppery notes of Stauning Rye are present, yet there's an underlying rawness, albeit endearing. The palate balances this with creamy vanilla and touches of tropical fruits, shadowed by subtle tones of tobacco leaves and dried fruits.
Finish: Stretching to a medium finish, pepper takes the lead, softened by fleeting notes of tropical fruits. A subtle salty undertone is met with a whisper of oak.
Comment: Unexpectedly enjoyable.
