From the heart of Edinburgh, here we have a newmake showing off the character of Edinburgh. This distillery is yet too young to have any actual single malt whisky for sale, so we are treated to a series of products showing us snippets of what is to come.

For this product they decided to play around using different types of malt; 90 % Pot Still Distiller’s Malt, 7.5 % Crystal Malt, and 2.5 % Chocolate Malt. They also utilized to yeast types; Edinburgh Ale Yeast and Distiller’s Yeast M Strain.

“Made by Edinburgh is the culmination of our extensive exploration of heritage beer yeasts and specialty malts.

Brewers Series No.4 is a new make is inspired by Edinburgh's rich brewing history. In creating this unique new make, we combined an Edinburgh heritage ale yeast with a mash bill recipe inspired by an 80 Shilling Ale recipe; a combination of distilling malt and two specialty malts.”

The Holyrood Brewer’s Series - Made By Edinburgh will be available to buy in Norway tomorrow at NOK 724 (14050102).

Nose: This is the darker one of the two Holyrood newmakes I have tried. Lots of cereal. A malty one, this.

Taste: Full bodied. Very peppery at first, then sweet and fruity after the initial onslaught. Orchard fruits.

Finish: Medium long. Gristy, rich, and very malty. Chocolate and cereal towards the end.

Comment: Thoroughly enjoyable!
