There have been a number of companies trying to speed up the maturation of spirit - sort of a whisky alchemy. Danish company EtOH is trying now, and they employ a process that combine six techniques to achieve this - or so they claim:
elevated operational temperature
high ultrasound wave extraction
inorganic acid catalyzation
increased wood to liquid ratio by addition of both barrel chips and barrel staves
controlled micro-oxygenation process
usage of flow rate and constant circulation of the liquid

“Hailing from Portuguese barrels, this malt has decades of heritage in its composition. Deep, robust, sweet but surprisingly delicate flavours create a complex experience. Aged with Port wine and Burgundy Brandy barrels for 7 days.”

I’m classifying this as moonshine.
Nose: Sweet and fruity chewing gum. Mild alcohol bite. The sweetness is bordering on artificial sweeter. Moonshine with flavouring essence? There is some oakiness here. Wet clothes left way too long in the washing machine. With time a weird citrus note - the artificial kind - you know the one added to certain products. Given further time the citrus aroma does dissipate somewhat.
Taste: Supermodel skinny. Honey, citrus and oaky water. Hints of chocolate. White pepper.
Finish: Very short. Blink and you miss it. Watery. Bland. Perfumy as well now. Not really jumping at the chance to have another swig. Something very artificial about most everything here; the “sweetness”, the “fruit”, the “oak” the “citrus”.
Comment: Hmm..it could perhaps pass for a dirt cheap 3 YO blend targeted at underage party people needing something to down their disco biscuits. Don’t get me wrong, it is drinkable. I have had worse; I’ve even had worse Scotch.
